Ingredients:

2 ½ cups flour
8 oz. pack Cream Cheese
(Low Fat Philadelphia Cream Cheese OK)
1 ½ sticks of butter
1/3 cup sour cream
1 tsp. salt
1 egg

Directions:

First add the salt to the flour in a medium mixing bowl. Then add the butter to that and use a pastry blender (or hands) to combine. Once this is well mixed, add the cream cheese and sour cream. Once it starts sticking together, flour board and knead the dough on it until smooth (approx. 3 minutes.). Refrigerate overnight or for a few hours.

Preheat oven to 350°.

Take the dough out of the refrigerator. After approximately fifteen minutes knead the dough again until it is just soft enough to roll out. Use a rolling pin on a floured board and roll it out until it is about ½ inch thick. Use a knife to just graze the surface of the dough in a diagonal criss-cross pattern. Use a small, round cookie/biscuit cutter (about 1 ½ inches in diameter) to cut out the biscuits. To make sure the batter does not stick to the cutter, dip the cutter in flour a few times. Rework the scraps until all the dough is used. Spread a well-beaten egg with a pastry brush on the tops of the biscuits. Place the biscuits on a cookie sheet approximately 1 ½ inches apart. Bake at 350°F for approximately 30 minutes or until golden. Serve hot, with honey, if desired.
